As Food and Beverage Manager, you will be responsible for helping to lead the Food and Beverage department inclusive of all bars and restaurants, ensuring a highly-trained staff, increasing Guest satisfaction and exceptional customer service at all restaurants and bars.

Your main responsabilities will be:

  • Collaborate with the Director Bars and Restaurants in the management of the bars and restaurants in all their functions and report diary management and incidents in the department.
  • Collaborate with coordination and monitor the bar and restaurant service (buffet, theme restaurant and bars) and the up selling of premium products and services (cocktails, premium drinks, tomahawk, lobsters, and special dinners) aligned to the Hotel Brand (narrative and theme).
  • Collaborate with coordination and monitor the operation of bars and restaurants based on the budget constraints and considering opportunity to generate extra income (upselling of premium products and services) and to secure compliance with the highest standards of operation and luxury positioning.
  • Collaborate with planning and preparation of the bars and restaurants budget cycle at the hotel, from its annual preparation, yearly accounting book opening, financial operation accounting registration up to mid-year forecast review and end of year accounting book closure with its balance, accruals, and provisions.
  • Act as substitute of Director bars and restaurants in their absences (holidays, sick leave, days off and meetings).
  • Communicate, coordinate, and implement all the instructions given by the director bars and restaurants to each team and section.
  • Inform the Director of bars and restaurants incidents that occurred during the day's services to consider better planning and minimize its impact on the operation and guest satisfaction.
  • Collaborate with coordination and monitor of the purchase and inventory of premium products (wine, liquors, tomahawk, lobsters, and others) to facilitate the decision-making process.
  • Collaborate with the assessment and monitor the evolution of the profile of the customer to consider evolution of procurement and inventory of premium products (wine, liquors, tomahawk, lobsters, and others) with the Sommelier and Mixologist.
  • Collaborate with coordination and monitor the logistic and procurement of the products, facilities and tools with vendors and the collaboration of the supply chain department.
  • Daily review of the in each area related to their work schedules, shift, and operation to report absences or potential incidents to the director bars and restaurants.

The ideal profile will have:

  • Bachelors or master's degree in Hotel Management, Tourism or Economic Studies preferred, or long-term track record of success in role within industry.
  • At least 3 years related experience as F&B Manager in exclusive properties and all-inclusive hotels.
  • Must be abreast of most Food and beverage related developments in the market place (inclusive of drinks).
  • Highly Fluent in Spanish and English, writing and speaking. Highly desirable other languages.
  • Innovative and forward-thinking approach.
  • Sound ability and knowledge to develop standards of operations and strategic processes.
  • Experience applying Forbes or AAA standards is valued.
